- 1 Fennel bulb, thinly sliced
- 2 Celery stalks, chopped
- 1 Carrot, chopped
- 1 Pound White fish (such as Alaskan true cod, halibut, or ocean trout), cut and divided into 2 equal size pieces.
- 1 Can (14.5 ounces) diced tomatoes, with juices
- 2 Cups Fish stock
- 1 Tbsp Tomato paste
- Salt, to taste
- Fresh basil and parsley, chopped, for garnish
- Ground black pepper, to taste
Instructions
- Begin by combining the dry sherry and saffron threads in a small bowl. Let them infuse while you prepare the other ingredients.
- Turn on the Instant Pot and select the sauté function. Heat the olive oil, then add the minced garlic, chopped onion, and shallot. Sauté until softened and fragrant, about 3-4 minutes.
- Add the fresh thyme, bay leaves, sliced fennel bulb, chopped celery, and chopped carrot to the Instant Pot. Cook for another 3-4 minutes, stirring occasionally.
- Add diced tomatoes with their juices, fish stock, tomato paste, and the saffron-infused dry sherry mixture.
- Gently place in the white fish pieces over the vegetables.
- Close the Instant Pot lid and set the valve to sealing. Select the manual or pressure cook function and set the timer for 5 minutes.
