  • 1/4 Cup Dry sherry
  • Pinch of saffron threads (optional)
  • 2 Tbsp Olive oil
  • 2 Cloves garlic, minced
  • 1 Onion, finely chopped
  • 1 Shallot, finely chopped
  • 2 Sprigs of fresh thyme
  • 2 Bay leaves
  • 1 Fennel bulb, thinly sliced
  • 2 Celery stalks, chopped
  • 1 Carrot, chopped
  • 1 Pound White fish (such as Alaskan true cod, halibut, or ocean trout), cut and divided into 2 equal size pieces.
  • 1 Can (14.5 ounces) diced tomatoes, with juices
  • 2 Cups Fish stock
  • 1 Tbsp Tomato paste
  • Salt, to taste
  • Fresh basil and parsley, chopped, for garnish
  • Ground black pepper, to taste

Instructions
 

  • Begin by combining the dry sherry and saffron threads in a small bowl. Let them infuse while you prepare the other ingredients.
  • Turn on the Instant Pot and select the sauté function. Heat the olive oil, then add the minced garlic, chopped onion, and shallot. Sauté until softened and fragrant, about 3-4 minutes.
  • Add the fresh thyme, bay leaves, sliced fennel bulb, chopped celery, and chopped carrot to the Instant Pot. Cook for another 3-4 minutes, stirring occasionally.
  • Add diced tomatoes with their juices, fish stock, tomato paste, and the saffron-infused dry sherry mixture.
  • Gently place in the white fish pieces over the vegetables.
  • Close the Instant Pot lid and set the valve to sealing. Select the manual or pressure cook function and set the timer for 5 minutes.
  • Once the cooking cycle is complete, allow the pressure to release naturally for about 10 minutes, then carefully quick-release any remaining pressure.
  • Open the Instant Pot lid and season the stew with salt and ground black pepper to taste. Discard the bay leaves and thyme sprigs.
